I would say Opera Mobile would be on the top of my list. Outside of an internet browser I consider Pocket Mechanic Pro to be essential in any device I own.
Throttle Launcher is a freeware application wich makes it possible to skin your QVGA Windows Mobile device like the HTC Diamonds Touch Flo 3D. It still has some bugs but if they are fixed I think this is a great peace of software:
The other software I'm usind daily and which is the most important one on my device, is CradleAlarm from Cradle Software. It is a great alarm software with many options to set multiple alarms with MP3 playlists. In particular the quiz function to prevent you from using the snooze in the morning too often is great. It's easy to understand and easy to work with. I don't know why it is not nominated for the 2008 award, but for me it is my most needed software on my device because I don't like using a "normal" alarm clock and the build in alarm of Windows Mobile is cr*p.
There are several apps I immediately place on a new device, but if I must choose one, I would have to say TextMaker. Putting a true word processor on my mobile device is what moved it from being a PDA to being a pocket PC. That app has let me travel for several without my laptop.
